Matcha popsicles? said my son Storm sceptical. Really mummy? Again?
No green tea for me!
I have tried several popsicles with the green gold – but the flavors were always a bit off… Now he refused to try my latest.
His sceptical dad was a bit easier to convince to try my newest invention – and he, to his surprise, loved it. Which made me so happy I made a little dance on the kitchen floor.
Back to my hardest critic – Storm. He at last gave in – after some serious motherly begging and nagging – and agreed to try one green popsicle heart. Not happily, but he did it. And he too liked it! Hurray!
I have not told them that it is also really healthy…. shhhhh….
4 popsicle molds
125 g Cottage Cheese (if you can’t get hold of Cottage cheese, you can substitute with more greek yoghurt)
75 g greek yoghurt with lemon
1-2 cm ginger – finely grated
1 dl apple juice
1 ts matcha
Handfull of mint leaves
(if you like your popsicles to be sweeter – add 1 tbsp agave sirup)
Peel and grate your ginger. Putt all your ingredients in a blender and blend thoroughly! You want a smooth popsicle mix – cause grainy Cottage cheese chunks in your pops are not exactly delish! Taste – and add agave if you feel you need it.
Now pour the mix into your molds and freeze.
Freeze for at least 4 hours and then enjoy your green, fresh, zingy matcha popsicles full of antioxidants! The perfekt healthy snack – and sooo yummy as well. Here’s why matcha is good for you – according to The Huffington Post.
