If you love coconut – this Bounty popsicle is really perfect for you.
I’ve named it after the delish Bounty chocolate because: It is soft and white on the inside, and have a seductive dark glaze of chocolate on the outside.
When I experiment with new flavors, my husband Per often asks me to please make the Bounty popsicles again! Because it is one of his favorites.
In this version I have added coconut yoghurt to make a leaner and healthier popsicle – yet still as flavorsome as I would like it to be. This way we can have these delicious popsicles often!
You need for the popsicles:
6 popsicle molds
350 g coconut yoghurt
1 dl coconut milk
1tbsp coconut flakes, plain
1 tbsp heavy cream/double cream
100 g dark chocolate, 52 % cocoa
1 tb sp canola oil or coconut oil
4 tb sp coconut flakes, plain
Mix the ingredient in a blender, and pour the mixture into the molds. Freeze.
Before the popsicles can be glazed with chocolate, you have to make certain the pops are 100 % frozen.
Melt the chocolate and mix it together with the oil in a water bath. (The oil will prevent the chocolate from crackling when you freeze the popsicles again).
When chocolatemix is ready, pour it into a glass or a tall and narrow container. Remember it has to be wide enough for dipping the popsicles into for the glazing.
Bring the popsicles from the freezer, and free them from the molds.
Dip the pops quickly in the chocolate mixture, and lay them on a tray covered with a non stick baking sheet – and quickly: Sprinkle with coconut flakes! You have to do this very fast before the glaze sets.
And then – eat your delish Bounty popsicles!
