Please, please, please – can we have blueberry smoothie popsicles?
Three beautiful boys are making puppydog eyes at me. We have been out – picking blueberries in the woods just outside Oslo – and now they want their reward.
Storm has invited his first cousins Isak and Jonas to stay with us and it warms my heart to see how well they all play together. It’s nearly impossible to deny them their wishes. And why would I?
A healthy snack
Wild blueberries are smaller than the cultivated garden ones, they are more flavorsome when used in popsicles and they contain more antioxidants! Also they can be picked in the woods for free – and garanteed no pesticides!
This is a perfect healthy snack for children and grown ups alike!
6 popsicle molds
200 g wild blueberries (fresh or frozen)
1 ripe banana cut in small pieces
2 tbsp hemp seeds
1 handful fresh mint leaves
150 g vanilla yoghurt
2 tbsp agave nectar
Pour yoghurt, banana, hemp seeds and agave into a blender or hand blender. Blitz till it’s totally smooth.
Add half of the blueberries and blend again.
Add the rest of the blueberries – but don’t blend – stirr gently.
Fill your molds and freeze. After 4 hours or more your popsicles are ready to eat.
